Barszcz Wigilijny z Uszkami - Christmas Eve Beet Soup
Clear red beet soup served with uszka dumplings. Essential Christmas Eve dish. Elegant and warming.

Ingredients
- 1 kg Beetroots
- 40 g Dried mushrooms
- 500 g Vegetables for broth
- 4 tbsp Lemon juice
Instructions
Make clear beet broth (see barszcz recipe).
Prepare uszka: make dough, fill with mushrooms.
Boil uszka separately.
Serve clear soup with uszka floating.
Garnish with fresh dill.
💡 Tips & Variations
Uszka are small ear-shaped dumplings. Make ahead and freeze. Soup must be crystal clear.
