Pierogi Ruskie - Potato Cheese Pierogi
Most popular pierogi variety in Poland. Filled with potato and farmer's cheese, topped with fried onions. Comfort food that defines Polish cuisine. Can be served savory or slightly sweet.

Ingredients
- 500 g Flour
- 2 eggs Eggs
- 800 g Potatoes
- 300 g Farmer's cheese
- 3 large Onions
- 100 g Butter
Instructions
Make dough: mix flour, eggs, water, knead until smooth.
Boil and mash potatoes, mix with cheese and sautéed onion.
Roll dough thin, cut circles.
Fill, seal edges firmly.
Boil in salted water until they float (5 min).
Top with fried onions and butter.
💡 Tips & Variations
Dough should be elastic and smooth. Seal edges very well. Can freeze before or after cooking.
