Zupa Ogonowa - Oxtail Soup
Rich Polish oxtail soup, slowly simmered to perfection. Deep, meaty flavor with vegetables. Festive dish reserved for special occasions.

Ingredients
- 1 1/2 kg Oxtail
- 3 large Carrots
- 2 roots Parsley root
- 300 g Celery root
- 1 stalk Leek
- 200 ml Red wine
Instructions
Brown oxtail pieces in oil.
Cover with 3L water, simmer 3 hours.
Add vegetables, cook 30 min.
Strain, return meat and sliced vegetables.
Add wine, season richly.
Serve with crusty bread.

Long, slow cooking makes meat fall off bone. Can be made day ahead. Very rich and filling.
