Zupa Szczawiowa - Sorrel Soup
Tangy Polish sorrel soup, bright green and refreshing. Lemony taste from fresh sorrel leaves. Spring favorite when sorrel is in season.

Ingredients
- 300 g Fresh sorrel
- 4 medium Potatoes
- 4 eggs Hard-boiled eggs
- 200 ml Sour cream
- 1 1/2 liters Vegetable broth
Instructions
Cook diced potatoes in broth 15 min.
Chop sorrel, add to soup, cook 5 min.
Remove from heat, stir in sour cream.
Season with salt and pepper.
Serve with quartered eggs.

Don't overcook sorrel - it loses bright color. Perfect spring soup. Can substitute spinach if sorrel unavailable.
