Barszcz Czerwony - Red Beet Soup
Classic clear Polish beet soup with ruby-red color. Traditionally served at Christmas Eve with uszka dumplings. Elegant balance of sweet beets and sour notes.

Ingredients
- 1 kg Beetroots
- 2 medium Carrots
- 200 g Celery root
- 1 large Onion
- 30 g Dried mushrooms
- 3 tbsp Lemon juice
- 4 cloves Garlic
Instructions
Chop all vegetables roughly.
Simmer in 2.5L water with mushrooms, bay leaves for 75 min.
Strain through fine sieve, press vegetables.
Add lemon juice, sugar, salt.
Simmer 5 min.
Serve with uszka dumplings.

Roast beets before boiling for deeper flavor. Make ahead - tastes better next day.
