Rosół - Golden Chicken Broth
Poland's quintessential chicken soup, golden and healing. Sunday dinner staple served with homemade noodles. Known as Polish penicillin for its restorative properties.

Ingredients
- 1 1/2 kg Whole chicken
- 3 large Carrots
- 2 roots Parsley root
- 300 g Celery root
- 1 stalk Leek
- 1 medium Onion
- 200 g Egg noodles
Instructions
Place chicken in cold water, bring to boil.
Skim foam thoroughly.
Add vegetables, herbs, simmer 2-2.5 hours.
Strain through cheesecloth.
Return sliced carrots and shredded chicken.
Serve with separately cooked noodles.
💡 Tips & Variations
Cold water start and gentle simmer = clear broth. Unpeeled onion adds golden color.
